Black Bean Salsa

Another from Todd - it is very tasty!
"We’ve been loving this quick and easy dip!"
  • 1-2 tomatoes
  • 1 can black beans - drained
  • 1 avocado - chopped
  • 1/2 bunch green onions
  • 2 cloves garlic
  • 1/4 to 1/2 bunch cilantro

  • Dressing:
  • 1/4 cup Olive oil
  • 1/4 cup red wine vinegar
  • Salt & pepper to taste
  • 1 tsp cumin
  • Add all ingredients and mix.
One new trick I learned - leave the avocado pit in the salsa and it won't turn the avocado brown...nice!
